That is interesting that the jujubes "Li" and "Lang" will fruit in you zone 5 area (New Mexico) and not in zone 5 Chicago. It has been found that the daytime temperature during the bloom stage must be 72 degrees F or higher (per the Chinese at Hebei University). Is it possible that the temperatures are higher in you area during the bloom stage than in Chicago? It does not make any difference if they have more heat later if they do not set.

Check the arcives for an extensive Jujube discussion. The item of note is that
only certain varieties seem to be able to toerate high humidity when
pollinating. I'm zone 5 but in high elevation New Mexico now where Li and Lang
certainly fruit. When I was outside Chicago also in zone 5 and with more heat
units they did not seem to fruit.
