Couiple more thoughts. (not so long this time).
For branch training, I use a short length of nylon cord or rope like 12 inches, and a clothespin. Wrap cord around the branch and the stake or branch and wire at a point that needs to be held, then clothespin the two ends of the rope to hold it. Easy to move around and adjust.
There are good discussions of espallier in "The Apple Book" by Rosanne Sanders, and "The New Book of Apples" by Joan Morgan & Alison Richards. See Also "Espallier Fruit Trees, Their History and Culture" by Alan Edmunds; lots of ideas. All are in NAFEX library.
