Have you ever processed the fruit by bletting? When medlars are bletted
they transform into a gooey flavorful substance that is something like
applesauce. Maybe this fruit would turn into something similar.

It sets a heavy crop of fruits that look like large, slightly russeted
hawthorns with open calyxes. They might work for jelly, but they are
rather dry for anything else.
