Do you know if the Cecil Farris walnuts you mentioned would do well in the Pacific Northwest?

When you say Japanese walnut, do you mean heartnut? They cross with English walnut, so you shouldn't need a pollinator on that account. As to needing one otherwise, it varies. Some English walnuts shed pollen at a different time from when the female flowers are receptive, so you need a second tree that sheds pollen at the right time. Others shed at the same time as the female flowers, so they can self-pollinated. Nor do they necessarily have to take a long time to bear. Cecil Farris in Michigan bred selections that would start to bear the season after the nut was planted. Other types might take up to ten years to come into bearing. Just depends on the genetics of the particular tree.

butternut), but am interested in planting Japanese and English walnut. My
question is will I need to plant two of each of these, or are they

have now come across grafted varieties. I'm guessing if I want to see nuts
in my lifetime, I should pull the seedlings and replace with grafted?
