T-buds work just fine for me.
I do most of mine with dormant scions grafted onto seedling rootstocks any time afte the rootstock has initiated growth in the spring - most as a bark graft(not really much different from a T-bud from a mechanical standpoint), but I've done simple whip grafts and whip & tongue with success rates similar to apples/pears.
