Sounds like evergreen would be perfect if you want screening - has anyone ever heard of evergreen fruiting hedge - or heard of a pinenut that grows as a bush?  hmmm....
 
The location will still not have full sun, as I don't plan to remove
the trees on my side of the line.  The neighbor is roughly to the west
of me, maybe a little north and west.  My trees are right there, but
tall, with no low branches, so there is some light from the other
sides.   There is presumably also competition from the oak roots.

So I'm wondering how well bush cherries would do in the spot,

In the few places we have tried beach plums,
 what is a beach plum?
they seem to do be unmatched for performance in some locations, while in other locations they fruit very little.  We have no idea why.  But they are definitely bushes.  when they perform well, they are superb, with no spraying and little bird damage.
 They're not evergreen.  The branches are thick and provide some stem density for screening.
