We don't freeze freshly cut apple slices. For best preservation quality, they have to be steamed for at least 3-5 minutes, preferably with a little sugar to further enhance keeping ability, since sugar is a natural preservative. You might describe our apple slices as 1/3 cooked applesauce. Then, as you mention, get all the air out of the bags that you can. They will keep for 18 months in a deepfreeze.
