Sitting in the tropical splendor of 11F Connecticut, here's what I remember
from two plant physiology classes 15 years ago. And the classes were in
Orono, Maine, so have some credibility. At least regarding cold.

Plants can avoid freezing by removing water from their cells, which increases
the dissolved solids and reduces the freezing point. But I don't think it
prevents freezing at -40. Very hardy plants just freeze. They dessicate the
cells, shrinking them so cell walls can hold the expansion of freezing, and
and then repair the incidental cell damage after thawing. I think a long
period of extreme cold would be less damaging than repeated temperature
swings, but don't know. And here in CT, I'll never find out. Plants can
also supercool. Water can remain liquid below its freezing point if there
are no nucleation points for ice to begin forming. I think I was told it
only works down to around -25F and peaches do this. If true, this might
explain the northern limit of peaches.
