Rick:

This will work for new shoots at the edges of the patch. The patch itself is
about 40' in diameter and close-filled with 30' bamboo. Do you ever cut
these to the ground to get at new shoots in the interior of the patch.

Phyllostachys nuda, common name "green" from Ivan Arnodtson via Sam Benowitz
of Raintree Nursery.
When the shoots first break the surface, dig with a few swipes of a hoe or
mattock blade next to the shoot, then turn your swing and sever the shoot
just above the rhizome. Chill asap.
Diagrams make it more comprehensible if you're not familiar with bamboo
anatomy.
