You are right - they will lose all tinge of green and get translucent white.
WC 1301 doesn't ripen as evenly, and the small ones on the bottom will
still be green when upper berries are ripe. Here, the birds don't bother
them and I can leave them until they start to shrivel and they are fine.
Rather tart for raw use, but juice, jelly, pies, etc. all work fine. The
French have a white currant glaze for lamb that I've wanted to try, but
don't have a recipe.
