Colder is better for potatoes - recommended storage is 35-45 degrees.
Ventilated crates should work fine, but keep them in the dark -- it doesn't
take much light to turn them green. They'll also store longer with a bit of
dirt on them - when I harvest for long-term storage I knock off any big
chunks of mud if present to prevent the moisture from making them rot, and
then wash them as I sell them.

Usually I sell red new potatoes as I dig them. Sales are slow this
year so I'm thinking about storing quite a few of them for 4-6
months.

So, I'm looking for storage suggestions. I can put them in either an
air conditioned room at about 65 deg or in a cooler at about 40 deg. I
have them in ventilated plastic crates; should I cover stacks of the
crates with plastic sheet?
