The carrots will taste fine until they start sending up greens again. than they are going into their reproductive cycle and will be woody and bitter. this generally starts to happen a few weeks after the ground thaws. the other problem with keeping carrots in the ground all winter is, unless they are well mulched and in a hoophouse will be impossible to get to when your ground freezes up and, generally, more than half will die in the frozen ground and turn to mush (but will look like a beautiful carrot until you try to dig it out). Your best bet is to dig them now, clean them up reasonably and store them in buckets of slightly damp sand in a place that is cold but won't get below say 29F (i.e a root cellar) and sell them through out the winter. The carrots will be of good quality for about 2 to 3 months this way and you will not lose half (or more) of them in the ground.
