I have to wonder if part of the reason we have trouble with Salmonella in this country is due to the fact that eggs are washed and acid dipped (which eliminates the protective waxy layer), then stored for extended periods before consumption, allowing bacteria to penetrate the shell.  Any thoughts on that?

As I recall, last summer I put ice packs in a big plastic bag on top of the egg cartons and that hindered condensation and the resultant dampening of the cartons in my insulated cooler.

Hello,
       When my husband and I lived on our boat, we kept eggs at room temperature and turned them every few days. It keeps the inside of the shell moist all around the egg. We've never been sick from the eggs kept that way.
