There are, of course, both hard and soft white wheats as well - which are much nicer for making whole grain products.  Some of the white wheat comes from Kansas, but what I buy for bread comes from Montana.

I used to grow 10 acres of soft  red winter wheat which is the only kind of wheat that will grow on the east coast. I never made much money on it. Soft wheat can only be used for making cookies and pretzels and all of it ended up feeding Frank Perdues chickens. Its too warm to grow oats with any weight thats why the best oats come from the far north. You want to look into growing hard red winter wheat, thats the bread wheat... Bob.
