Hi - some of our vendors use clear, shallow plastic tubs with ice in them...and a block under the back to slightly tip the tub up so you can see inside it.  They put radishes, basil in bags, lettuce in bags, etc. Still keep some reserved in the cooler too!

That's a good idea, but most of our lettuce heads are way too big to fit in our bags.  We've been thinking about a cooler with a Plexiglas top, but it sure won't look as nice!

After years of having my lettuce wilt I started bagging it for sale. I
put 1/2 pound of lettuce in a bag (the "5-a-day" produce bags work well)
with a label that has my farm name, address and the kind of lettuce that
is in the bag. When kept in a bag they do not wilt or dehydrate and any
unsold bags can be put back in the cooler and sold again at the next
market (they will keep well for up to 10 days this way). I have gone
from having 25 to 50% of my lettuce trashed to less than 10% trashed and
my customers seem to like the bags. I also bag spinach, kale, chard,
arugula and spring mix.

oh and I never have more than 2 bags of any type of lettuce out at a
time. Most stay in the cooler with ice packs and towels.
