Marty,
I do know that Lambsquarter coming up in a potato field indicates that it is time to move the potatoes. Lambsquarter generally indicates a healthy soil rich in humus. Also, do not allow lambsquarter or orach (same family) to grow near potatoes as they will stunt the growth of the potatoes. And yes, the tops are the very most delicios part of the lambsquarter.

I broke off the tops (3 to 6 inches) of some plants that are getting
over a foot tall and put them in a sauce pan with a small amount of
water and brought to a boil. I thought they would be tough but they
weren't. They were delicious. I harvested some more for dinner but this
time had too much water because the flavor seemed to be diminished. I
had planted some snap peas that didn't come up but the lambsquarter did
so I decided that it was my crop.

It is interesting that there is a patch of lambsquarter in the bed that
seems stunted while the rest is large and vital looking. Any ideas?
