"The Ball Blue Book" is pretty much the standard reference.
Dollar General, WaMart, and similar are where to get a few dozen home
canning jars.
You are aware of the problems you might encounter if an inspected
commercial kitchen is not used?
I believe the Texas Health Dept will help you, both with training and
regulatory information.
