Good Morning, Mark & M-F,
This year, i began a fellowship in developing rural entrepreneurship
(KECI) in Kentucky - a UK tobacco diversion program. Two of the other
coaches in training and graduated are Billy & Rebecca Webb - who own
Sheltowee Farm near Morehead..........i really like and respect these
folks and what they are building! Last i heard, they are looking for
other farmers who would grow in co-operation with their
enterprise........i heard there was a large market unserved for the
shrooms in this part of the country. They sell to MANY white tablecloth
restaurants in the Lexington area, and to large stores. They work hard at
it, and sell other types of mushrooms as well - and adding. I had hoped
to take their training day in early December, but the season was just too
full! We are not so far from Morehead, and may consider adding this into
our woodland farm- depending on startup cost and our ages!

There is a fellow up by moorehead that has a comercial shitaki operation
he gives classes a couple times a year you can contact him though his
workshop a thttp://www.sheltoweefarm.com/index.cfm It was definatly an
intersting class I am going to do some experementing with a few varietiys
and see how they do if nothing else for household consumption and csa
distribution
