organics hasn't really caught on here yet, at least not in my part of Kansas
You might be surprised at how many folks would like it. I was told by every single person involved in my local farmers market that the customers didn't care about organics, or heirlooms ( my two niches), they were partly right, their customers didn't. but the number of folks that did want it but weren't getting served surprised me. I started growing chemical free before I started selling and deided I wasn't going to sell food that I wouldn't want to feed my family, it has been working so far.
