Try mache in the winter--it's very sturdy. It likes somewhat dense soil,
unlike most other plants, so use a board to press down on the area where
you'll plant it. If this seems weird, do a trial to see if it germinates
and grows better in loose, friable soil or edging-towards-compacted soil

I'm looking to grow some salable winter crops in addition to spinach.
Anyone have suggestions?
