I've grown lemon cukes for the past three years - they sell well for me. I price them at 3 for $1 and give away a lot of the smaller ones as freebies. They're ready when the stripes at the stem end are a bright lemony yellow (without much orange), regardless of size. I find that the skins start to thicken a lot once they turn orangy, though they're very pretty at that stage displayed in a fruit bowl on the kitchen table.
