It would also depend on how many containers are used.  For basil I use the following calculations:  1/4lb per plant/3wks.  I have planted around 200plants and thus hope to get 10-15lb/week.  Some I sell bulk at the farm market the rest goes into baggies for a local retailer.  I also use some in vinegars - the mark up per plant makes the value-added products worth making - particularly the red basil vinegar! (very popular)
