Soapy slime!!!!  I have very fond memories of eating it in Otavalo, Ecuador.  Good stuff when prepared correctly - very small pinwheel grains.  But you have to rinse it or it is bitter.

I think you can get a bit of information from Arrowhead Mills in Herford, Texas. Frank Ford when he was alive kind of pioneered the growing of the extremely weird grain called quinoa or goosefoot. I just don’t like the soapy slime.
