For any of you arugula growers willing to try
an experiment, try this:

Make up a couple of bundles of mature
arugula for your next market.
Wrap a red ribbon around the bundles
and make a sign for the "Hot Arugula"
with the red ribbon tied around it in the
same fashion as the bundles.
Price at twice the rate of regular arugula.
Note on your sign that "Hot Arugula has
a hotter, more intense flavor than regular
arugula, with more fiber content and a
chewier texture. A great addition to
hearty chilis and other man satisfying
dishes. Not for the faint of heart."

and see what happens. I bet you will
find some folks willing to give it a try
at the higher price. If you only offer
limited quantities, a certain cachet
will develop.

That is how you find a market.
Don't write a possible product off
without giving it a try. ;-)
