Caryl,
We just had ribeye steaks from a 2-1/2 year old Charolais cross steer
tonight. I could not find a single complaint. We have found that the two
Charolais cross cows my daughter raised from bottle calves have given us
lower quality veal calves. I stopped harvesting their calves, but retained
the heifers. This steer has been around so long I had him trained pretty
well when it comes to weighing and moving. My deductions on the retarded
maturity paid off on him.

months, mostly around 18.
