They are soaked primarily for two reasons: flavor and preservation. Once a
person boils a salted duck egg, they can keep it in the refrigerator for up
to one year.

But, I think that taste is probably the most important reason. The salting
process only seems to salt the whites. Once boiled, Filipinos take the egg
and chop it up with tomatoes and onions. This mixture becomes quite a
delicious salad that's a treat for them.
