Bob; our Tom's are picked without stems into half full 5 gal. buckets,
or less with heirlooms. We start with the newest section first then move
into older[ more disease prone ] rows. Tom's are cleaned when being
transferred to flat plastic stackable trays from the buckets while in
the shade. We use abrasive cotton gloves for cleaning so you are
cleaning with two hands. This is very fast as long as you don't have
pickers who are picking 'smooge' which wet the gloves. Glove are used
for one session before laundering. If you are a real tightwad turn them
inside out for an extra turn. I buy them in ten packs.
This is basically the Foodbank Farm system; we have yet to improve on
it, except we scavenge the trays from Belgian or Dutch imported winter
Tom's.
