Adriana, I don't know anybody using hydrocooling on tomatoes, they seem to
cool best in a cool room. I find that keeping fresh picked tomatoes as dry as
possible to be the best for maintaining quality. I always dry brush them
before boxing and only use water to clean the dirtiest fruit...Bob.
