Let us assume a one horse operation with mechanized tilling, composting, planting, harvesting, etc.  It is funny you can find this information easily on greenhouses (probably because someone wants to sell greenhouses), but not so easily on open air.

Wouldn't the average profit per acre be driven by several widely
variable drivers as economy of scale, methods of distribution,
marketing factors, etc.

and many many more factors.  Isn't the price of wholesale honey up three times over last year's price because the Chinese honey was pulled off of the market because illegal antibiotics were found and someone in the government actually stopped it from coming into this country? Who could have predicted that?

and speaking of vegetables, think about the methods of growing.  The large mechanized vegetable operation is sure not going to produce as many vegetables per acre as the competent, retired, energetic home gardener who doesn't have to worry about getting a tractor into his field.  Any figures you get on profit per acre are going to be much like today's forecast of the weather a month from today. 'Most likely it will be colder here in Virginia, but it might not on that specific day.  And whether it will be raining or snowing or a beautiful sunny day is just about anyone's guess.'
