Internships really are the best way to go to learn, for learning the basics and the rhythms.
Ideal I think = work at one place at least 3 days a week (so as to get a good overview of how one farm works), and the rest of the week volunteer at different farms so as to see all the different ways of doing things.
And one of the most valuable benefits of doing internships, besides seeing how things work, is seeing what DOESN'T work. You can save yourself a lot of time and money by seeing and hearing about things that don't work -- the fencing project that didn't work, the weed control method that didn't work, the tomato trellising method that didn't work, etc. Since small farms don't have much time or money to waste, this is incredibly useful.
