Hi Tom,
There are two kinds of small round cukes on the market, lemon and crystal. The crystals neve will turn color. My experience with lemon cukes is the darker the color, the bigger the seed, but I also found there were some folks at my farmers markets that wanted to see a lot of color regardless of seediness. Most folks in my area of the country like their lemon cukes about three inches long and pale yellow.
