Allan - I wondered also about the lettuce soaking in ice water on the way to
market. I've always harvested lettuce, dunked it well into very cold water
and swished it around to get any debris out (it's mostly growing under
walnut trees), but then I've made sure to shake out the water well since
I've always heard that too much water is damaging to the heads. Then I band
it and put it in a cooler with blue ice packs that are covered with a folded
towel in the bottom. I've never had a problem with lettuce quality when
handled this way. I only bag the lettuce as it is purchased. Usually will
put out a dozen heads at a time in a big clear rubbermaid storage container
with abut 6" sides that has lots of ice and some water in it.
