But I harvest lettuce in the morning before the market. Right into coolers filled with ice water. When I get to the market and have set up, I start bagging them up, drain some of the ice water and leave the lettuces in coolers.


I don't know if I'm reading the above correctly, or it I've really missed something in post-harvest handling!
How much water is actually in the cooler, is the lettuce right in the water? (And, is everyone doing this?)

I'm very interested in everyone's post harvest tips for keeping things looking fresh at market.

Does anyone rinse their muddied vegetables in lukewarm water rather than chilled water. (Like washing off kale.) I've heard that this plant will remain fresher if initially washed in luke warm water, but I'm not convinced by my experience.
