What you will have to do is demand a copy of each grower's certification
papers and also ask that they have either the original or a copy on
display at their booth. if they cannot produce organic certification
papers than they cannot legally use the term organic. If a vendor
persists in using the term without papers report them to the local
certifying agency. They than should be able to fine that person (up to
$10 grand).
To be sure about this you should contact the NC certifying agent and ask
that person exactly what you should expect.
