one last (hah!) question......one person suggested orienting the greenhouse to winds flow over the long way, another said orienting it so it flows through end to end.....hmmmm.....both opinions sound reasonable!

any wind experts (on a "mild" day here the winds are 15-20 mph) out there?

wish i could send you all some goat cheese as a thank you!
We often have winds like that in northern Illinois, especially during the Spring season. I can't comment on using the ends to ventilate but using side vents on unheated tunnels works well. If a strong wind is from the west but the sun is strong and outside temperatures are warm, I open the east-side vent enought to ventilate the tunnel. The wind doesn't blow into the tunnel but the air pressure from the wind still moves the air through, giving the tunnel good ventilation. If the wind is from the east, you do the reverse. I also like the idea of the vent-air moving right through the plants. I keeps the leaves dry, which serves to prevent disease.

Also, some very good comments from Paul Weideger. There is no teacher like experience. Unheated tunnels are a relatively new tool and there's a lot to be learned and a lot to be gained from them. Concentrate on high-value crops and capture high-value markets locally and you can do well.
