If it is too dry tubers and roots dry out. Between 50 -70 % relative
air humidity they stay quite fresh. Temperature in our cellar always was around 8 C, winter and summer. Sides and roof were made of mass concrete and the surface of this was the coldest place where condensation took place. Because the roof was convex water dripped off the walls onto an earth floor and from there was sucked downward and out of sight. We had shrubs and even trees growing on top to help keep temperature and moisture even. Fact is that we stored tubers like potato and yacon for up to a year and they would taste and look as good as fresh. The only things is that the potatoes started to shoot after a few months and so we went down and removed these. Often a few hours of work, taking box by box and loading potatoes done in a new box.
