I'm always concerned about breeding for a single, or a small number, of characteristics in a plant variety. Trying to increase the amount of lycopene in tomatoes, taken by itself, could well result in the loss of some other valuable nutrient. I think the emphasis needs to be on enriching the soil (which of course doesn't mean just throwing fertilizer at it). Then returning to open-pollinated varieties, which by definition are not best for high-yield factory farming.
