Paul,
I just had good luck with rye.  As a kind of experiment I broadcast winter rye over about 1 1/2 acres that I'd recently mowed.  Before everything was covered by snow I'd guess about 75 to 85 percent of the seeds were sprouted and growing strongly.  It was a sure success for the local deer but I think in a month or so I'll have a pretty good mulch crop.
