Actually, iTunes *won't* let you save an AAC encoded file as an mp3. But if
you burn a playlist to a CD-RW, you can then rip the songs from the CD as
mp3 files (then just reuse the CD for something else.) I did this yesterday
for a client's blog, so I know it's that easy.

Unless I am mistaken, the iTunes store sells songs with AAC encoding, rather
than MP3. You need iTunes to make the purchase, however, and iTunes will
convert the songs to MP3 for you.
