Anyone here make homemade wine?
What is "acid blend" as an ingredient?
Siphon off "lees".... what's that?
What's the shelf life onĀ "wine yeast & nutrient"?
I would like to make prickly pear cactus wine - the pears are in.

Yes. Yesterday we made dry peach wine. The peaches are out of this world
this year.

A blend of 3 acids, it helps stabilizes the wine, brings out the "fruitness"
and other things.
Siphon off "lees".... what's that?

After you take out the netted bag, some fruit particles settle to the
bottom. The "lees" are the gunky particulate matter.
What's the shelf life on "wine yeast & nutrient"?

Sometimes printed on the side of hte package. Yeast packets kept in the
fridge and nutrient in a cool dry pantry or other suitable spot. Lasts a
long time.

Go for it. If you want a drier wine, you use less sugar. My dry wine recipe
calls for 5# of sugar to 10-12# of fruit in a 6 gallon bucket. Use 5 gallons
of water = 5 gallons of wine. If you want sweeter wine, you add more sugar.
Search for recipes online.
Seal the wine well at every stage. A few fruit flies will ruin your wine.
Good luck!
