THANKS!  Where do you get the ingredients needed? 

I made tigger melon preserves today, came out good.  And made prickly pear
cactus jelly, came out good too.  Peaches are awesome this year.  I have 2
friends who have waaaaaaaay too many, and so we trade peaches for
potatoes....
good trade as I have too many potatoes.

Also traded beans for canning jars, another good trade, from the guy that
used
to be in GA, that Bev knows or knows of.  He can't use his quart jars any
more,
and is getting too old to garden.

It seems most of my whole days are out in the garden this year --- I wound up
accidently losing weight from all the work this year.  The garden is
seriously
out of control - heavy yields in everything, except my corn crop failure - my
bad.... on that one.

I didn't thoroughly explain. You "rack" the wine, by literally siphoning the
clear wine to get rid of the "lees."  You take a clear siphon tube and put
it just above the lees, then begin siphoning from your bucket into a carboy
(the clear glass or plastic jug similar to those used by water companies in
offices).

Racking is often done more than once. I racked the last batch of peach wine
twice, but some rack more often. I learned that once you make the wine, if
you let it sit in a cool spot and don't move it around much, that really
helps. You only stir it well when you add something (tannin, pectin enzyme,
etc.). My peach wine came out pretty clear and I was told that was hard to
achieve.

No homestead messages in my box since 8/6/2010.

I don't know anyone who has not planted Park seeds. I didn't know they
were bankrupt. I like this article outlining their potential
purchaser- lots of posturing and political pressure being used to keep
them down the road here in Greenwood.
