I do 10-20 at a time, by myself. I have both a 60-gallon Pickwick propane
scalder and a Pickwick HD drum picker (the kind you hold the bird against).
I've also done batches of 40-50 with a friend who butchers hers all at once,
and the setup is well within that capacity. More than that, and we'd run out
of chill tanks; and have to kill some, then eviscerate, then kill more, etc.
I prefer getting all the messy work done, cleaning up, and doing the
evisceration.
