I skimmed that article. Doesn't it just get hard? I was able to find
some unpasteurized cider a couple of years ago. I like it with just a
little kick. If you just leave it set for a week or so, it gets that
kick.
Pasteurized cider is like pasteurized milk, it just rots :>(
