The prohibition of pork products is from a desert people. In the desert resources are limited and in general pigs eat mostly the same stuff people eat. It was either a pig or a person. Pork production competes with people production.
Interesting book that addresses the histories of pork and the sacred cow is "Cows, Pigs, Wars, and Witches."
