What she said is that, using the cover they sell, that there would be no moisture. No rain could touch it. The only moisture that would enter from the inside would be from humidity and from food moisture. When the oven fire is burning it dries out any slight moisture from either of these sources. By the time food is placed inside, the clay is bone dry, which is one of the things that makes cooking special. Just like the pizza stone, which pulls moisture from the dough and makes the crust crisper.
