The most widely known type is. But 'kimchee' is a generic term meaning any
type of fermented (and salted) vegetable. 'Yoelmu Kimchi' for example is
made
of whole radishes. Other types consist mainly of garlic or cucumbers. The
main ingredients of 'baechu kimchi' are pears and chestnuts. Some forms of
kimchee flavored with salted fish or anchovies. </HTML>
