Looking back over the years at some of the goofy - but sometimes successful -
substitutions I've had to devise. Making salsa once, ran out of the number of
chiles needed and tried to sneak in a few shots of Tabasco. Yuk.

My tomatillo salsa was such a

As you said, you gotta take a chance. Ducks are so cool. I'm waiting on the
McMurray catalog, and the 'big' one...um...starts with an S - Strom-something.
You know the one.

Spreadsheets are one of mankind's greatest inventions, I think. I keep a
master
shopping list on one, with everything categorized. Sometimes I pull it up
when I
draw a blank in the menu department, and just looking at all those ingredients
invariably provides the needed inspiration.
