Hee-hee, i've had to make myself back off of the magnificent tomato
obsession a bit, as 'roun heah people mostly like them red and round! I
now keep the varieties down to maybe 24, 2 of each variety (all chosen
for flavor first and beauty second) and hold to it. I start alot of OP
or Heiloom types for others and some for sale, so it is hard to not plant
out all the orphans that come back home ;) I try to keep alot of seed
varieties in the family seed library here - but it is difficult to keep
them all grown out - so do have some for donation if anyone is needy of
seed!
So, we make it all. Varietal Sauces, Killer Pizza Sauces, Bloody and
Blondie Mary Mixes, Yeller and Red Juice, Taco Sauces, Hot Sauces,
Marinaras,Tomatillo Salsa and Sauces, Soup, dried varietals, rubs w/
dried tomato, pistou, whole maters, stewed maters,roasted sauces, fried
green maters. We seem to live and breathe the canning or freezing of
maters.
The best part is feeding them to the young around here.........they live
in abundant farmland, and so many have no clue of the fresh wonders there
are out there to eat. Cherry tomatoes are unique to even some of them -
let alone all different colors of them! Why aren't these kids eating
fresh anymore - the welfare society here has removed the farmer in only a
generation or two! Hey, just a short rant this time....
For the short time we get tomatoes in these hills, it is a slice of
heaven and we live with some canker sores and juicy chins - feeling very
glad! Then, BAM, they are gone again and the shelves are full.
