James, on how much tofu per person is required:

I certainly agree with you on that. The other part of wisdom is to never
order anything in a vegetarian restaurant (or cook anything from a
vegetarian cookbook) that would have meat in it if served elsewhere. I like
vegetarian cooking, so long as it's honest.
