For a helpful supplement to Stowers's treatment of the types and functions of ancient letters (documentary and literary), see John L. White's LIGHT FROM ANCIENT LETTERS, which focuses on formal characteristics of letters preserved on papyrus. Since you're interested in the openings of the Pauline letters, you might also find useful Paul Schubert's older FORM AND FUNCTION OF THE PAULINE THANKSGIVINGS.
